- 2 tablespoons red curry paste
- 400 ml coconut milk
- 300 g prawns peeled and deveined
- 300 g white fish fillets cut into chunks
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 cup vegetable broth
- 1 red bell pepper sliced
- Fresh basil leaves for garnish
- Lime wedges for serving
Heat a large pan over medium heat and add the red curry paste.
Pour in the coconut milk, stirring until combined.
Add the vegetable broth and mix well.
Stir in the fish sauce and brown sugar, adjusting to taste.
Add the prawns and fish chunks into the curry.
Throw in the sliced red bell peppers, and let simmer for another 5 minutes.
