  • 2 tablespoons red curry paste
  • 400 ml coconut milk
  • 300 g prawns peeled and deveined
  • 300 g white fish fillets cut into chunks
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 cup vegetable broth
  • 1 red bell pepper sliced
  • Fresh basil leaves for garnish
  • Lime wedges for serving

Instructions

  • Heat a large pan over medium heat and add the red curry paste.
  • Pour in the coconut milk, stirring until combined.
  • Add the vegetable broth and mix well.
  • Stir in the fish sauce and brown sugar, adjusting to taste.
  • Add the prawns and fish chunks into the curry.
