  • 4 cod fillets about 6 ounces each
  • 3 tablespoons unsalted butter
  • 4 cloves garlic minced
  • Juice and zest of 1 lemon
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley chopped (for garnish)

Instructions

  • Preheat your oven to 400°F (200°C).
  • Prepare a baking dish by lightly greasing it with cooking spray or a bit of butter.
  • Place the cod fillets in the prepared baking dish and season with salt and pepper.
  • In a small saucepan over medium heat, melt the butter and add the minced garlic.
  • Add the lemon juice and zest to the melted butter and garlic.
