Rinse the sushi rice under cold water.
Cook the rice in a rice cooker or on the stove with 2 1/2 cups of water.
While the rice cooks, prepare the spicy salmon mixture by flaking the salmon into a bowl and mixing in Sriracha, mayonnaise, soy sauce, and sesame oil.
Once the rice is finished, mix in rice vinegar and allow it to cool.
Preheat your oven to 350°F (175°C).
In a baking dish, spread the sushi rice evenly across the bottom.
Spread the spicy salmon mixture over the rice, evenly distributing it.
Top with chopped green onions and nori strips as a garnish.
Bake in the oven for 20-25 minutes until heated through and slightly golden on top.
Allow to cool for a few minutes before serving.
