Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1 lb fresh salmon fillet
  • 2 tablespoons Sriracha sauce
  • 1/4 cup mayonnaise
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 sheet nori cut into strips
  • 2 green onions chopped

Instructions

  • Rinse the sushi rice under cold water.
  • Cook the rice in a rice cooker or on the stove with 2 1/2 cups of water.
  • While the rice cooks, prepare the spicy salmon mixture by flaking the salmon into a bowl and mixing in Sriracha, mayonnaise, soy sauce, and sesame oil.
  • Once the rice is finished, mix in rice vinegar and allow it to cool.
  • Preheat your oven to 350°F (175°C).
  • In a baking dish, spread the sushi rice evenly across the bottom.
  • Spread the spicy salmon mixture over the rice, evenly distributing it.
  • Top with chopped green onions and nori strips as a garnish.
  • Bake in the oven for 20-25 minutes until heated through and slightly golden on top.
  • Allow to cool for a few minutes before serving.
